#15 Pineapple Rice - 6 points plus on Weight Watchers

First things first. Thanks to all of you who take the time to go through my blog . You are the reason I am inspired to blog ! :)

Although I have been trying to avoid white rice for a long time ( over 5 months now), I couldn't just resist this one.I have been very choosy about what I eat in the past few months but I do succumb to pressure and eat bad (or worse) some days.It isn't easy to stay on track while you are trying to lose weight/maintain a healthy lifestyle, have a day job and try to cook good. I just try my best besides sometimes you just need to give in and learn to enjoy life on your way . After all, a  healthy lifestyle should also be an enjoyable one.

The below recipe serves 4 and the points plus value is per serving.


Things needed
2 cups cooked Basmati(Long grain) rice
1 1/2 cup diced pineapples( fresh)
1 cup diced green bell peppers
1 cup diced red bell peppers
3/4 cup diced white onions
2 -3 cayenne red pepper
1 tsp cumin seeds
2 -3 tbsp oil (canola)
Salt to taste

How to

- Heat 1/4 tbsp oil in a pan .
- Toss in the pineapples and saute for a short time until the some of them get a golden brown coating. You don't want to fry the pineapples too much as they may lose their juicy taste. You might even consider adding them fresh as opposed to sauteing.
- After keeping the pineapples aside, heat 2 tbsp oil in a pan and toss the cumin seeds and cayenne peppers.
-When the red pepper are roasted, add the onions.
- Cook till the onions are translucent and then add the bell pepper (both color).
- Stir fry the veggies with salt. This tastes best if the veggies are  a little crisp and not cooked to completion.
- Mix the rice with veggies and top off with the pineapples.
- You could fry a handful of cashews/raisins and add to the rice for a tastier finish.


I like my rice with cucumber raita (Indian salad) and a spicy side or even chips !
Love the taste, inspired from Hawaiian pineapple rice.
