#14 Eggless Blueberry coffee cake - 4 Points plus per half serving!


My husband's aunt went to a blueberry farm last week and got us a whole box of fresh wild blueberries. I had been storing some to make a cake and finally got the time to make some today. I haven't posted anything for a long time now and this was such a good break. I am still on weight watchers on and off so thought I should post the point plus values as well for these. Yes, it is an expensive desert with regards to the points plus value, but hey it is so delicious! You should taste to know!


                   


Ingredients


2 cups all purpose flour
2/3 cups white sugar
2 cups milk ( I used 2 %)
1/2 cup butter at room temparature
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground cardamom
1 cup fresh blueberry

To Make

-> Stir the butter and sugar and keep aside.
-> In a bowl, add the baking powder,salt, cinnamon and cardamom to the flour.
-> Mix in milk / sugar /blueberry with the flour and beat the butter well.
-> Preheat the oven to 450 degrees.
-> pour the batter into a buttered pan and bake @ 375 degrees for 40 minutes.
-> Before removing, broil cake for 1 1/2 minutes until the crust turns golden brown. This makes it
perfectly crispy!
-> Let stand for 5 minutes and dig in!
