Masala Tofu Recipe

I took a week off to stay home with my baby and turns out that am trying to re-establish the chef in me. For the past one year I have not been much into cooking for I was absorbed in various other things in life and now with this vacation and a relaxed mode ,guess Iam regaining the interest to cook and to try different things again. Not sure how long this will last but as far as it does , good for hubby :-p . By the way, he loved the Tofu Masala today...
1 Pack Firm Tofu
1/2 Onion
2 tomatoes
1 green chilli (optional)
1 green bell pepper
4 scallion stems
1 tsp chilli powder
3 tbspn corn flour
1/2 tsp Turmeric powder
1 garlic clove chopped finely
1tsp tomatoe sauce
Salt to taste
-->Cut Tofu into cubes and mix with corn flour ,1/2 tspn chilli and a little salt. Now, deep fry this tofu until the surface becomes golden brown and crisp yet soft inside. (Do not fry too much as tofy may become hard and chewy)
--> In a pan, drizzle oil and saute the onions/turmeric powder.
--> Toss in the bell peppers/scallions and let it cook for 3 minutes.
--> Now, add the tomatoes/chilli powder /salt and cok for another 3 -4 minutes.
--> Finally when tomatoes are cooked well, add the tomatoe sauce and mix well and keep aside
--> Just before serving, mix the tofu with the curry made and reheat if needed .

Recipe for a Salad in the Indian Style

Love this one.

You need

1 tomato choppoed
1/4 green bell pepper chopped
1/4 onion chopped
1/2 tsp oil
1 small cup of sweet corn
1 cup plain yougurt
1 tsp cumin powder
salt to taste


--> Saute the onions lightly with oil.
--> Mix it with tomatoes/bell peppers/sweet corn/ yogurt and salt.
--> Sprinkle cumin powder and serve as a side for any rice!

Sabzi Polo recipe - Discovering Persian food

My love for food and my interest for trying out vegetarian varieties of other cuisines landed me on this Persian delicacy .My Aunt suggested this to me, while I was never too fond of Persian after I had a bad experience at one of the Persian restaurants , Iam now slowly growing to love their food for their flavours! "Polo" in the name is probably what they refer to like in the Indian version of "Pulao"? Anyway, a quick fix and great on the taste bud , this is one of my latest favourites!

Ingredients for Sabzi Polo

1 1/2 cup of rice (long grain preferred)
1/4 bunch cilantro
1/2 bunch parsley
1/2 bunch green onions
1/2 bunch fenugreek leaves
1 tsp turmeric
1 tsp butter
41/2 cups of water
Ground Black Pepper
Salt to taste

How to Make..
1) Bring the water to boil and add the washed rice. Let the rice cook just until it surfaces above the water.
2) Mix the chopped veggies with turmeric,salt/pepper and add it to the above.
3) Add butter to the rice and mix and let cook in simmer for 15 minutes.

Serve with side of your choice and enjoy! I made the Indian Salad which I will post shortly!
