How to make Tom Kha - The Thai recipe

I love Thai Food.. the taste of their fresh vegetables, the aroma of their spices make me go crazy. And we always prefer to dine thai, for it is one food that you dont feel " O god, why the hell did I just eat so much! " . We are on strict no-going-out for lunch /dinner for past 3 weeks, so constantly trying out something new @ home so that we dont get bored.. Today i had almost lost it, I wanted to eat thai so badly.. especially their Tom Kha soup.. I just love the tangy/spicy/sweet taste it has.. I looked up a hundred website,had no thai ingredients and thought I could never make it!... But then, dint feel like giving up.. I had half a bag of frozen mixed veggie left, so thought , why not giving this a try ?? From all the blogs for this recipe, it was evident that the soup needed two main things- coconut milk, lemon juice- little did I realise that it is all one needs to make this delicious thai dish!!
right, forget the lemon grass, basil leaves or the thai leaves!!!!

Is this all it needs??
1/2 bag Oriental Mixed Veggies- (Mine had broccoli,beans,mushroom)
1/2 Carrot chopped
1 cup of boiled peas
1/2 bunch of corriander leaves chopped
1/2 onion chopped as for salad
2 1/2 cups of coconut milk
3/4 cup of water
1 small piece ginger chopped finely
6 small green chillies chopped length wise
1 tbspn chilli powder
1 big lemon or 2 tbspn of lemon juice
1tbspn oil
salt to taste

The Secret......

-> Heat oil in pan , and add ginger ,chillie and corriander and saute for 1 minute
-> Add the onion and saute for 2 minutes
-> add all vegetables ,chillli powder, salt and saute till vegetables are cooked
-> Add the coconut milk ,water and let cook for 3-4 minutes.
-> When the flovour gets into the vegetables, switch off and take out from stove
-> Add lemon juice and mix well

Can be eaten as soup or served with hot Thai rice ..!
